I have whipped this recipe up randomly for special occasions or just for fun! It looks complicated – but it’s not! It’s amazing and well worth the small effort for a fabulous dessert. I typically serve this in small shot glasses with demitasse spoons – and it’s fun to do that when hosting a fun appetizer and mini desserts soiree 🙂

Ingredients
- 2 tsp unflavored gelatin
- 2 Tbps very cold water
- 1/4 cup boiling water
- 1/2 cup granulated sugar
- 2 Tbsp cocoa powder
- 1 1/2 cup heavy cream, very cold (I put mine in the freezer for about 15 minutes)
- 1/2 cup Irish cream, very cold (also into the freezer!)
- 1 tsp vanilla
Instructions
- Place bowl and beaters (for stand mixer or heavy bowl and beaters for hand mixer) in freezer for 20 minutes to chill
- Sprinkle gelatin over cold water in small bowl, let stand 1 minute to soften
- Add boiling water to the gelatin, stir constantly until gelatin completely dissolved - let stand to cool at room temperature
- Stir together sugar and cocoa in the chilled mixing bowl; add heavy cream
- Beat at medium high speed until stiff peaks form, gradually pour in chilled irish cream, vanilla and gelatin mixture. Beat continuously at high speed until well blended and soft peaks form (I advise putting a tea towel over the mixing bowl to prevent splashing!)
- Let stand 5 minutes so mixture thickens
- Spoon into serving bowls or small shot glasses, place in fridge to chill
- Chill 1 hour before serving
- I usually put a dollop of whipped cream on the top - and sometimes dust with cocoa powder
