We had some amazing chili the other night – and needed some equally good cornbread to go with it! This is easy and delicious!
Ingredients
- 1 cup cornmeal
- 1 cup all purpose flour
- 1/3 cup white granulated sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup sour cream
- 6 Tbsp unsalted butter, melted
- 2 eggs
- 1 can chopped green chilies, well drained
- 1/2 cup freshly shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees. Grease a 8 or 10" cast iron skillet with shortening. Place in oven for 5-7 minutes while mixing everything together.
- Mix cornmeal, flour, sugar, salt and baking soda together in a large bowl. Add sour cream, butter, eggs and mix until just combined. Add in chilies and cheddar cheese until incorporated.
- Remove heated pan from oven, pour into the preheated dish and place back in oven.
- Bake until toothpick comes out clean, approx 20-25 minutes. It could always take longer or less time based upon your oven. Cornbread will be lightly browned on the top!
- I suggest pairing this with honey butter. Blend 4 Tbsp unsalted butter with 4 Tbsp honey using a hand blender.
