Dill Potato Salad

I made this on a whim as I love dill and had extra potatoes on hand!

Dill Potato Salad

Ingredients

  • 2 lbs small or baby red/yellow potatoes, cut in half in if necessary, in order to make uniform pieces
  • salt and fresh ground black pepper
  • 1/2 medium red onion, chopped very fine
  • 1/4 cup apple cider vinegar
  • 2 Tbs olive oil
  • 2 tsp Dijon mustard
  • 1/2 cup frozen peas, thawed
  • 1/4 cup dill, chopped

Instructions

  1. Place potatoes in medium pot, cover with cold water
  2. Bring to a boil, boil until just tender, around 15 minutes
  3. Toss onion with vinegar and 1/2 tsp each of salt and pepper, allow to rest for at least 30 minutes, stirring occasionally
  4. Drain potatoes, run under cold water to cool
  5. Whisk oil and mustard into onion mixture
  6. Add potatoes, toss gently to coat
  7. Add peas and dill, gently toss
