I made this on a whim as I love dill and had extra potatoes on hand!
Ingredients
- 2 lbs small or baby red/yellow potatoes, cut in half in if necessary, in order to make uniform pieces
- salt and fresh ground black pepper
- 1/2 medium red onion, chopped very fine
- 1/4 cup apple cider vinegar
- 2 Tbs olive oil
- 2 tsp Dijon mustard
- 1/2 cup frozen peas, thawed
- 1/4 cup dill, chopped
Instructions
- Place potatoes in medium pot, cover with cold water
- Bring to a boil, boil until just tender, around 15 minutes
- Toss onion with vinegar and 1/2 tsp each of salt and pepper, allow to rest for at least 30 minutes, stirring occasionally
- Drain potatoes, run under cold water to cool
- Whisk oil and mustard into onion mixture
- Add potatoes, toss gently to coat
- Add peas and dill, gently toss
