My wonderful neighbor brought fresh strawberries so I whipped this up for fun and took some to her 🙂 YUMMY!
Ingredients
- 2 quarts fresh strawberries, washed/hulled/halved
- 1 tsp fresh lemon zest
- 2 Tbs fresh squeezed lemon juice
- 1/2 cup plus 2 Tbs granulated sugar
- 1 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 cup buttermilk
- 1 tsp vanilla
- whipped cream or vanilla ice cream
Instructions
- Preheat oven to 375
- Stir sliced strawberries, lemon zest and juice, 2 Tbs sugar in large bowl until combined. Let rest for 20 minutes or until juicy
- Place butter in 9x13 pan. Place pan in oven until melted, about 8 minutes. Remove from oven
- Whisk flour, baking powder, salt, baking soda, and 1/2 cup sugar in medium bowl until well combined
- Whisk buttermilk and vanilla in glass measuring cup
- Whisk buttermilk mixture into flour mixture and whisk until smooth
- Pour mixture evenly over melted butter; DO NOT MIX!
- Using a slotted spoon, evenly scatter strawberries over the batter. Drizzle 3 Tbs of the accumulated juice over the berries. Discard remaining juice
- Bake in preheated oven until batter is puffy and slightly golden in the center, and golden brown around edges, 40-45 minutes
- Cool on a wire rack
- Serve warm with whipped cream or ice cream
