Black Bean, Corn, and Yellow Rice Recipe

I love black beans – and with fresh corn?  I mean you can’t go wrong!

Ingredients:

1 8 oz package yellow rice

1 2/3 cups water

2 Tbs olive oil

onion

red pepper

1 15 oz can black beans, rinsed and well drained

about 2 cups fresh cooked corn (I always cut leftovers off the cob and freeze for recipes like this!)

2 tsp lime juice

1 tsp ground cumin

Directions:

1) Bring rice, water and olive oil to a boil in a saucepan over high heat.  Reduce heat to medium low, cover, and simmer til rice is tender, approximately 20 minutes.

2) Saute onion and red pepper – to desired tenderness.

3) Mix together the beans, corn, lime juice, and cumin in a large bowl.   Add peppers and onions.  Serve over the yellow rice!

4) Serve hot!
