I haven’t made this in ages.. And yes, it was just as delicious as I remember!!!
Ingredients:
1 block cream cheese
1/2 stick unsalted butter
approximately 16oz white or mixed color corn (I cut leftover corn on the cob and save it just for recipes like this!)
1 -2 Tbs cumin
2-3 Tbs chopped jalepenos
Dash salt
Directions:
Cook corn according to directions OR heat up the leftover corn.
Melt butter and cream cheese over low heat.
Add corn, mix in cumin, and top with jalepenos.
Serve warm – –with tortilla chips or tortilla scoops.
