My daughter LOVES these pan cookies!
1 box light brown sugar (2 cups)
2/3 cup vegetable oil
3 eggs, beaten
2 3/4 cup flour
2 1/2 tsp baking powder
dash salt
8 oz (or more to your liking) chocolate chips
Combine sugar and oil (see my tip for softening brown sugar that is too hard)
Stir until sugar is moistened.
Mix in eggs.
Add in flour, baking powder and salt.
Mix well.
Stir in chips -mixture will be very thick!
Bake 25 minutes at 350 – be careful not to overbake.
Cool and cut into squares.
