I love pears. They are just so delicious – so this cake – yeah – it’s delicious, too!
Ingredients
- Cake:
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 1/2 cups granulated white sugar
- 3 eggs
- 1 cup vegetable oil
- 1 tsp vanilla extract
- 2 cups peeled and diced pears
- 1 cup chopped walnuts
- Brown Butter Frosting
- 1/2 cup unsalted butter
- 2 cups confectioner sugar
- 1 tsp vanilla extract
- 3 Tbs water
Instructions
- Preheat oven to 350
- Grease and flour a 10" tube pan
- Mix flour, baking soda, salt, cinnamon and nutmeg in large bowl
- Beat sugar and eggs with a stand mixer on medium speed until light and fluffy, about 3-4 minutes. Beat in oil and add vanilla. Mix until well blended.
- Mix in flour mixture until batter is completely smooth.
- Fold in pears and and walnuts. Pour batter into prepared pan.
- Bake in preheated oven until toothpick inserted in center comes out clean, about 45-50 minutes.
- Cool in pan for 15 minutes, then invert onto wire rack to cool completely, another 30-35 minutes.
- Frosting:
- Melt butter in medium size pan over low/medium heat. Continue stirring until the butter has turned a light rich brown color and has a nutty aroma, about 7 minutes. Stir this entire time or the butter will burn easily. Remove from heat and stir in confectioners sugar and vanilla, whisking until smooth consistency. Stir in 1 Tbs of water at time, until frosting is of consistency to pour over cake. Drizzle over cooled cake.
