Ooh my this is delicious. We modified a very basic recipe and this may have truly been the best pasta sauce we’ve ever made! If you don’t want to add in the vodka, you can leave it out, but truly, you cannot even taste it.
Ingredients
- 1/2 cup unsalted butter
- 1 onion, diced
- 1 cup vodka
- 3 tomatoes, diced
- 1 can diced tomatoes (28oz)
- 1/2-1 cup chicken broth
- 1/2 tsp salt
- 3/4 tsp pepper
- 2 cups spinach, washed and stems removed
- 1 cup sliced portobello mushrooms
- 1 cup cream
Instructions
- Saute onion in butter, until softened
- Pour in vodka, cook for 10 minutes
- Add in fresh tomatoes, canned tomatoes, mushrooms, broth, salt, and pepper
- Cook for 20 minutes, stirring occasionally
- Stir in spinach and cream
- Cook an additional 15-20 minutes, stirring occasionally
- Serve over cooked pasta
