The best roast chicken EVAH!
2 chicken breasts, bone in, skin on
2 cups chicken broth
1 – 1 ½ Tbs olive oil
Cracked black pepper
Fresh herbs – I used rosemary.
Preheat oven to 425.
Grease a baking pan large enough to hold both breasts and the chicken broth. Place breasts in, skin side up. Pour chicken broth all around. Drizzle olive oil over the top of the breasts. Sprinkle herbs over.
Bake at 425 for 50-60 minutes (or until juices run clear). These were large breasts, so it took an hour.
Serve immediately – this is truly the best roast chicken EVER!
