Chocolate Chip Pan Cookies

I’ve been making these for YEARS – we used to call them “Congo Bars”..   And “YEARS” means about 35..  Um, maybe more..  LOL

Biggest advice on this recipe – DO NOT OVERBAKE them!


1 box light brown sugar

2/3 cup vegetable oil

3 eggs, beaten

2 3/4 cup flour

2 1/2 tsp baking powder

dash salt

8 oz chocolate chips

pecans/walnuts (optional)


Preheat oven to 350.

Combine sugar and oil, stir until sugar is moistened.  Mix in eggs.  Add in flour, baking powder and salt.  Mix well.  Stir in chips.  (Mixture will be VERY thick.)
Spread in 13×9 greased pan.

Bake 25 minutes at 350. Don’t overbake!
