Chewy Oatmeal Raisin Cookies

These are YUMMY!  I made these on a whim for my boyfriend (yes I have one!) and he gobbled them up..  Poor thing, don’t you feel sorry for him??  😉

My secret method was to soak the raisins for about 30 minutes PRIOR to adding them to the recipe, this kept them nice and soft and made the cookies nice and chewy..

Preheat oven to 375.

Ingredients:

1 3/4 cups quick OR regular oats – I have used both – and cannot tell a difference

1 cup raisins (remember to soak them!)

3/4 cup all-purpose flour

1/2 teaspoon cinnamon

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/4 sticks unsalted real butter, softened but not melted

1/3 cup packed light brown sugar

1/3 cup granulated white sugar

1 large egg

1/2 teaspoon vanilla

Directions:

Beat butter, brown sugar, and granulated sugar in a large bowl with an electric mixer until light and fluffy. I use a stand mixer as it’s easier.

Add egg and vanilla and beat until well mixed.

Stir together oats, flour, cinnamon, baking soda, and salt.

Add oat mixture and beat until just combined.  DO not overmix as then the cookies will be tough.

Drain the raisins well – you don’t want them to be soggy when you add them in.  Mix the raisins into the dough – by hand – otherwise they will get ripped up by the beaters.

Bake at 375 on greased cookie sheets (or use parchment paper) for about 12 minutes.  Remove from oven, cool 3 minutes, then remove from pans onto cooling racks.  Let cool completely, then store in sealed container for up to 5 days.
