I *totally* made this recipe up – when I had a lot of peppers from Produce Farmers Direct! I remembered the stuffed peppers my Mom used to make, and thought I”d throw an Italian twist on them.. Yum…………
Ingredients:
4 large green bell peppers, cut in half lengthwise, seeds removed
1 pound uncooked ground sirloin
2 cups cooked macaroni
1 tsp dried Italian seasoning
fresh basil, washed and snipped (or torn) into small pieces
1/4 tsp freshly ground black pepper
1 tsp minced garlic
1 cup parmesan (or asiago) grated cheese – I *always* use fresh grated 🙂
1 large egg
24-28 oz pasta sauce
2 cups shredded mozzarella cheese
Directions:
Preheat oven to 350. Spray a roasting pan with cooking spray – that will hold all 8 pepper halves in a single layer.
Wash the peppers, cut in half lengthwise. Remove seeds.
Combine the ground sirloin, macaroni, Italian seasoning, basil, pepper, garlic, parmesan cheese, egg and 1 cup of the pasta sauce. Mix well.
Divide the mixture evenly among the green pepper halves, press down into the pepper. Place the peppers into the prepared pan. Pour the rest of the pasta sauce over the top. Cover tightly with foil.
Bake for approximately 75-90 minutes or until peppers are soft and the meat is cooked. (Note – you can cook the meat half way before mixing with other ingredients – this will lessen your cooking time.)
