I cannot get enough of this salad in the summer. Yummy… My DD will fight me over it… I *hate* when summer is over and the tomatoes in the store all look pitiful.. 🙁
Ingredients:
Ripe tomatoes – heirloom/german johnson/big boy – as long as they are ripe
Mozzzarella cheese ball
Reduced balsamic vinegar (to taste) OR regular balsamic – sometimes I mix and use both
Fresh basil – you can buy at the store fresh or grow your own like I do!
Directions:
Slice the tomatoes and the mozzarella cheese into fairly thin slices.
Layer on a platter.
Drizzle the reduced balsamic over the top.
Slice the basil onto the top.
There you go – ready to serve!!
