Rosemary Garlic Roasted Potatoes

I make these a lot as they are so very easy..

Any kind of potatoes will do 🙂 These were red potatoes as that is what I had on hand..

Wash potatoes – I never peel.

Cut up into bite size chunks.

Put them into a zip lock bag. Add garlic olive oil to coat. Not too much – don’t want mushy potatoes!

I then grated garlic/sea salt all over them and squished the bag all around.

I then poured the potatoes into a greased pan (with sides). I spread fresh rosemary all over the top.

Place in a preheated (425) oven for about 35-30 minutes.

Test for doneness with a fork. If it goes in easily -they are ready!

I then removed from the oven, grated parmesan cheese all over the top (with my trusty microplanar) and stuck back in the oven for about 5 more minutes.

Yummy. YUMMMY!!!!!!!
