Jane’s Peppermint Bark

This is such an easy and fun thing to make. No matter how you make it or WHAT IT LOOKS LIKE, I GUARANTEE it will be gobbled up!!

Recipe:
12 oz milk chocolate chips
12 oz white chocolate chips or bark
1 tsp peppermint extract
red food color (optional)
5 or 6 unwrapped, crushed candy canes (we used to double bag and daughter would whack them with a rolling pin)
–this year I broke in half and placed in small food processor and pulsed

Cover a large jelly roll pan with aluminum foil, shiny side up

Place milk chocolate chips in microwaveable bowl, heating in 30 second intervals on high and stirring well each 30 seconds. When almost melted, remove from microwave and stir until smooth. Mix in 1/2 tsp of peppermint extract

Pour onto foil covered pan and spread out fairly thin. Chill for about 10 minutes.

Place white chocolate chips in microwaveable bowl, heating in 30 second intervals on high and stirring well each 30 seconds. When almost melted, remove from microwave and stir until smooth. Mix in remaining 1/2 tsp peppermint extract

Pour white chocolate on top of cooled milk chocolate and spread to cover

If desired, drop 6-8 drops of red food color over top of white chocolate. Draw a fork tines thru to make fun design

Immediately pour smashed/crushed peppermints over the top and press in with hands or pancake turner.

Chill about 15 minutes. Remove and peel foil from the bark and break into pieces.

Store in sealed container in cool place. Or you can store tightly covered in refrigerator.
