Cheese cookies/straws

My neighbor asked me to help her make cheese cookies from her Mom’s recipe which she finally found after searching for it everywhere..

Mary doesn’t bake so she came to the right place!!

She had her Mom’s old cookie press – so cool! However, I was happier using mine as I am well versed with mine.

These are DELICIOUS!!

Recipe:

3 sticks real unsalted butter (3/4 pound) straight from the refrigerator – do *not* let it get warm
1 lb cheese, sharp sharp cheddar. Grate by hand, do not use pre-grated.
4 cups flour (after sifting)
2 tsp salt

Preheat oven to 350

Cream the butter in a stand mixer.

Add the cheese and mix well.

Stir in salt.

Add at LEAST 1 1/2 tsp of cayenne pepper, maybe more. Her original recipe called for “a dash”, but no way was that enough!

Add flour 1 cup at a time until mixture is creamy and non sticky.

Place the dough in a cookie press, and use whatever disk you like.

(To get the dough the right shape, I place it on a piece of saran wrap, and roll it up making it easy to push into the press.)

Press out onto a non greased pan. Bake approximately 11 minutes. These cookies/straws should *not* be browned.

Let cool about 5 minutes on a rack, then remove onto another rack.

Let cool completely before storing – I recommend putting layers of wax paper in between as they are delicate..
