Waffle Recipe!!

This morning I woke up around 830 (late as normal school/work days it’s 6am). I kept thinking, hmmm, what to make for breakfast. My DD makes awesome pancakes (homemade of course) so I wasn’t about to step on her toes..

Waffles, yup, that was my choice..

Here you go – we almost licked the plates!

Waffle Recipe

Heat waffle iron (I have a Belgian maker, where you flip it over.) I sprayed some cooking spray on it, you can also oil it with a oil and a brush.

2 eggs
1 3/4 cup milk (I used skim)
1/2 cup butter (here I went whole hog and used real butter 😉 )
2 cups all purpose flour
4 tsp baking powder
1 Tbs sugar
1/2 tsp salt

Beat eggs by hand until fluffy, beat in remaining ingredients just until smooth. Pour batter onto center of hot waffle iron. Bake until steam stops, about 5 minutes or so.

Remove carefully and eat while hot!

I had some extra, cooled them (not on top of each other or they get mushy) and then wrapped in wax paper, into a freezer bag, and popped into the freezer for breakfast for DD some time this week.. I’ll just pull it out and slap it into the toaster. Or maybe she will 🙂

I almost heated up some of my applesauce to pour over the top. Maybe next time!
