Simplest and yummiest London Broil EVAH!

I was scarred for life after eating London Broil at several parties thru the years.. Can we just say TOUGH AS NAILS???

So, I wasn’t sure I wanted to deal with one at home after that, I mean what would be the point? But hey, the store had London Broils (thank you for the tip, Nancy!) on sale buy 1 get 1 free so I figured why not – mine has to be wayyyy more tender, right? 😉 It’s been years since I’ve made one of these.

I started marinating it tonight – I figured I’d let it marinate for 2 solid days so it will be good and tender for us!

The roast is 2.5 pounds.

I cut shallow diagonal slits on one side of the meat. This will allow the marinade to absorb into the meat.

Combine:

1 – 16oz bottle Wishbone Italian dressing
2 Tbs dry white wine
2 tsp Worcestershire sauce
1 Granny Smith apple, cut into thin slices

The marinade

in a large zip lock bag. Add the beef, close the bag, and squish the marinade all around the meat. Put in the refrigerator and marinate for at least 24 hours. 48 is good, 72 is even better. Move the bag around from time to time, making sure all sides of the meat get a good dose of that yummy marinade.

This is Saturday night’s dinner, so I’ll keep you posted on how it turns out 🙂
