Another family favorite. Who can resist soft buttery cute little cookies like this?
Recipe:
2 1/2 cups flour (all purpose – not self rising)
1/2 tsp salt
1 cup unsalted butter, softened, but not mushy (!)
1 1/4 cup confectioner’s sugar
1 egg
1/4 tsp almond extract (gives the cookies that yummy flavor)
1 tsp vanilla extract
Preheat over to 400.
Sift the flour and the salt together.
Cream the sugar and butter together until very creamy. I use a stand mixer but a hand held will do the trick. And you can mix by hand if you would like! Mix in one egg until well blended, then the almond and vanilla extracts. Gradually add in sifted ingredients until well blended.
Fill the cookie press and press onto ungreased cookie sheet – about 2″ apart. Decorate with sprinkles if you like. (Make sure you knock off the extra sprinkles before you bake- otherwise they burn on the bottom of the pan. I literally SHAKE the pan over the sink!)
**NOTE** sometimes the dough is too stiff to go thru the press so I have to add more butter. I’m not sure WHY this is – maybe different types of butter? I always use unsalted but maybe different brands… ???
Bake for about 6-7 minutes or until just starting to brown. Doesn’t take long on these cookies as they are small and full of butter 🙂
