Pancake Recipe

These are for my daughter’s 17th birthday..   Yes, it’s today, and yes she asked for pancakes for breakfast before school.  I’m such a great Mom..  LOL!

Pancakes:

Ingredients:

1 1/2 cups all-purpose flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tablespoon white sugar

1 1/4 cups milk

1 egg

3 tablespoons butter, melted

Directions:

In a large bowl, sift the the flour, baking powder, salt and sugar. Make a well in the center of the dry ingredients and pour in the milk, egg and melted butter.  Mix until smooth.

Heat a pan or griddle over medium high heat. Scoop (I stopped pouring batter ages ago as scooping works better – meaning less mess!) using about 1/4 cup for each pancake.  Flip when bubbles form on the pancake.  Cook until browned on both sides.

DD (Darling Daughter) requests chocolate chips on her pancakes.  However, I was more civilized and put pecans on mine..
