Roast in the crockpot

There was a chill in the air this morning.

So I started thinking “comfort food”.

I pulled out a frozen pot roast

I sprayed my crock pot liner with cooking spray

I placed the roast in the crockpot with a quartered onion, some baby carrots and some low salt chicken broth (I did not have any beef broth on hand)

I cracked black pepper over the top

I snapped on the lid and cranked the crockpot up to high. I left it on high for about 5 hours and then down to low for about 4 more hours

I then cut up red potatoes and placed them on the top.

I put it back up on high for about an hour or so

The house smelled fabulous when I came in from doing yard work

And dinner was ready!!

Typically, I mix a little cold water with a tablespoon of cornstarch and stir it into the crockpot for the last 20 minutes or so of cooking time. This makes a yummy gravy! We were starving so I did not make the gravy tonight!
