Sliced Baked Potato Recipe

This is a fun way to jazz up a boring baked potato 🙂

4 medium baking potatoes, about the same size (so they cook evenly)
1 tsp salt
3 Tbs melted butter
2-3 Tbs fresh herbs – (I love rosemary and chives)
2 Tbs fresh grated parmesan cheese (use that microplanar!)
4 Tbs grated cheddar or any other type of cheese you like on your potatoes

Preheat oven to 425.

Wash potatoes.

Cut potatoes into thin slices (probably about 1/4″) but *not* all the way through the potato. I lay a wooden spoon along the potato when cutting to keep me from cutting all the way through!

Put potatoes in a baking dish, fan out the slices slightly.

Sprinkle with salt and drizzle the melted butter all over.

Sprinkle the herbs all over, shove some down into the fanned out portions.

Bake for about 55-60 minutes (depends on the size of the potatoes – you might use less/more time) Use a fork to test for doneness.

Sprinkle with cheese.

Bake for another 10 minutes until cheeses are melted and the potatoes are browned.

These are so pretty to serve!
