Meatless pasta sauce

I love meatless sauce for certain kinds of pasta, or to use on pizzas..

Meatless Pasta Sauce

3/4 cup finely chopped onion
olive oil

4 cans (15oz) 100% natural Hunt’s diced tomatoes
2 (6oz) cans tomato paste (I use no salt/low salt)
1 Tbs dried oregano
1 Tbs dried parsley
1/2 cup fresh basil, chopped
2 Tbs minced garlic

Heat olive oil over medium heat until hot. Place chopped onions in and saute until soft.

Mix all ingredients together – including onions – in large pot.

Simmer over medium high heat for approximately 45 minutes.

This is a great sauce for freezing. This is another item my friend and I made during our “Freezer Fest Cooking Day”. We dipped the warm focaccia bread in it.. Yummmmmmmmmm.
