Lemon meringue pie is my ALL TIME favorite pie EVER. We were invited to a soiree where I had to bring an easy to serve dessert – so mini pies it was! Typically I do a mini Chocolate Chess Pie but I was looking for something a bit different.. Easy!
Use my lemon filling on top of mini pastry rounds!
I used 2 store bought crusts, used a round cookie cutter, put them in the pie pan and placed hot filling on top – along with the meringue. Then I baked per the recipe to brown the meringue. Done!
EASY!
