This recipe was a breeze. TRULY a breeze. I threw it all in the slow cooker, walked away for hours, came back and dinner was READY! Best thing ever!
Ingredients
- 2-3 red potatoes
- 1 sweet potato
- 1 cup washed, snipped green beans
- 1 cup small carrots
- 1 onion, sliced
- 2 cups water
- Salt and pepper
- Red wine
- 1 3-4 pound top round roast
- 2 Tbs Olive oil
Instructions
- Heat olive oil in large pot.
- Place roast in pot and sear. Turn to sear until dark brown all sides.
- Place ½ the vegetables in the crock pot. Place seared roast on top. Sprinkle with salt and pepper. Splash red wine on top. Place the rest of the vegetables on top of the roast. Pour water over the top.
- Seal lid on the crock pot.
- Heat on high for 4-5 hours or low 8-9 hours until roast is tender.
- Enjoy!
