Ooh there’s nothing like apple pie at this time of the year – well, really at ANY time of the year! This recipe is DELICIOUS!
Ingredients
- 2 pie crusts (homemade or store bought!)
- 4 pounds assorted apples
- 2 Tbs fresh lemon juice
- 1/4 cup plus 1 Tbs bourbon
- 5 Tbs unsalted butter
- 1/3 cup granulated sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1 egg, beaten
- coarse sugar
Instructions
- Peel and core the apples, slice into 1/4 slices. Place in a large bowl,sprinkle with lemon juice and 1/4 cup bourbon. Melt 2 Tbs butter in large skillet, place half the apples into the skillet. Sprinkle with half the granulated sugar Cook, stirring occasionally, until the sugar dissolves and the mixture comes to a simmer. Reduce to medium, cook another 6-7 minutes or until the apples begin to soften. Transfer to a bowl. Melt 2 Tbs butter and do some process with the other half of the apples. Add the 2nd batch of apples to bowl, sprinkle with cinnamon and ginger. Cool completely.
- Place one pie crust in a lightly greased 9" pie plate. Press edges up against the sides. Place cooled apples into the crust. Dot with remaining 1 Tbs of butter, cut into small pieces. Pour the tablespoon of bourbon over the apples as well. Place other crust over top, pressing to seal. and crimping edges. Cut slits in to to allow steam to escape. Brush the crust with the beaten egg and sprinkle with coarse sugar. Refrigerate 1 hour.
- Put a baking sheet on bottom rack of oven. Preheat oven to 400. Place the pie on the preheated baking sheet. Bake until crust is golden, about 65-70 minutes. Cool at least 2 hours before serving.
