Pressure Cooker Chili

We had *NO* plans on Friday night so I whipped up some chili in the pressure cooker..

Yes it was spicy and awesome!

2-3 Tbs olive oil
1 lb good quality ground beef (mine happened to be a bit frozen still!)
1 large onion, chopped
2 cans diced tomatoes
1 can tomato sauce
1 can kidney beans (drained)
2 cups vegetable or chicken broth (I used low salt)
2 chopped up (seeds included) jalepenos
1 Tbs chili powder
1 Tbs cumin
splash of worcestershire
1 tsp minced garlic

Heat the oil in the cooker. Place the beef and onion into the cooker.

Brown the beef just slightly.

(I did not drain the grease).

Throw in the tomatoes, tomato sauce, kidney beans, broth, chili powder, jalepenos, cumin, garlice and worcestershire.

Lock the lid on, get heat to about medium, so the rocker rocks for about 10-12 minutes. Let cool on it’s own. When pressure is down, remove lid.

Serve with cheese or green onions or sour cream or more jalepenos 🙂

I also made corn muffins. The meal was delish!
