Made this last night – yummmmyyyyyyyy!
Only thing I would do differently is *not* use the rack at the bottom of the cooker.
Here you go:
3-4 boneless chicken breasts
1/4 cup Dijon mustard
1/4 cup whole grain mustard
3 Tbs honey
2 Tbs light brown sugar
1/4 tsp salt
1/4 tsp onion powder
1 cup chicken broth
Place chicken at the bottom of the pressure cooker.
Mix together the 2 mustards, honey, brown sugar, salt and onion powder.
Spread half of the mixture over the chicken in the pressure cooker. Set aside the remaining sauce.
Pour chicken broth into the cooker. Lock on the lid, after cooker comes up to a medium rocking motion, cook for 8 minutes.
Remove cooker from heat – don’t slide across the stove!
Let the pressure release for 10 minutes, then quick cool in a bath of cool water.
Remove the chicken, spread with remaining glaze and serve 🙂 I served with the Famous Roasted Red Potatoes and green beans!
