Lemon Blossoms. you cannot eat just one…

A good friend just asked me about this recipe. I had forgotten about these lovely yummy muffins.. They are yummy! Original recipe called for regular size muffins, but these are better as you can pop one in your mouth. So maybe, just MAYBE you can stop at one 😉

This makes about 60 little “blossoms”… Use mini muffin tins…

1-18.5 oz package yellow cake mix
1-3.5 oz package instant lemon pudding mix
4 large eggs
3/4 cup vegetable oil

Glaze:
4 cups confectioners sugar
1/3 cup fresh lemon juice
Grated zest of 1 lemon
2 Tbs vegetable oil

Preheat the oven to 350.. Spray miniature muffin tins with cooking spray. Spray them WELL or they will stick!!

Combine the cake mix, pudding mix, eggs, and oil and blend well with an electric mixer until smooth, about 2 minutes. Pour a small amount of batter (less than a tablespoon or they bake over the top and you can’t get them out of the pan) into each cup of the prepared tin. Bake for 12 minutes. Turn out onto a tea towel. Let cool…

To make the glaze: Sift the sugar into a mixing bowl. Add the lemon juice, zest, oil, and 3 Tbs water. Mix with a spoon until smooth. With fingers, dip the cupcakes into the glaze while they are still warm, covering as much of the cake as possible. Or, spoon the glaze over the cupcakes on a wire rack, with wax paper underneath to catch the drips…

Let the glaze set thoroughly (may take an hour) before storing in an airtight container…
