I love love LOVE risotto.. It’s such a great dish, always comes out fabulous, and everyone loves it..
I took my usual Risotto Recipe — I left out the bacon, scallions and extra cheese on top.
INSTEAD, (yummy!) I roasted acorn squash and then put the roasted squash INTO the broth for the risotto. As I was adding it into the risotto, the flavor just POPPED. It was fabulous. Of course I put some seared sea scallops on top 🙂
