Pimiento Cheese

My friend Shirley dropped by the other day – and I gave her the grand tour of the Christmas decorations and the newly redecorated master bathroom. I made some wraps for lunch and also pulled out some of my homemade pimiento cheese. She e-mailed me tonight and said “The pimiento cheese was so yummy!”

So I thought I would post the recipe 🙂

2 1/2 cups shredded extra sharp white Cheddar cheese
1/4 – 1/2 cup pimientos (I like pimientos so I used 1/2 cup!)
1/3 cup light mayonnaise (I used Duke’s)
1 Tbs Dijon mustard
1 tsp minced fresh garlic
1/8 tsp black pepper

Combine all ingredients and mix until well blended. Makes about 2 1/2 cups.

I serve with pita chips – also good with celery..

(I have also added chopped jalepenoes when I like it spicy.)
